“耗子洞张鸭子”闻香止步

提起“耗子洞张鸭子”的“樟茶鸭子”、“烧鹅”、“烧鸭”、“烟熏鸭”等,成都几乎是无人不知。那么这个奇奇怪怪的店名,到底是怎么一回事情呢?清末,成都有两处取名为“耗子洞”(成都称老鼠为耗子)的地方。其中一处在成都提督东街和署袜街交口处,其外面是茶馆,里面是酒店、旅馆。由于巷子深,进口小,故被人们戏称为“耗子洞”、1928年,张国良跟随父亲在这里摆摊,出售烧鸭子等。

1931年,摊子迁到街对面“江东浴室”门口的过道上,取名“福禄轩”。1932年,张父去世,“福禄轩”由张国良独自经营。由于张国良严守“不怕无人买,只怕货不真;不怕无人请,只怕艺不精”的父训,兢兢业业地经营。从进货、加工、销售严格要求,走出了一条发展和壮大之路:“福禄轩”的进货十分严格;配料也挑选优良的,精心加工制作;卖货更为讲究,他始终坚持“剩买主不剩货”这一贯销售原则,店里决不卖陈货。

久而久之,食者发现“福禄轩”的鸭、鹅味道好,货新鲜,因此购者如云。由于“福禄轩”原来在“耗子洞”摆过摊子,店主姓张,因此人们就称为“耗子洞张鸭子”,而“福禄轩”的店名反而被淡忘了。名声传开后,生意更好,从此耗子洞张鸭子便名气大增,当时就成为了成都的名小吃。
