太平猴魁属绿茶类尖茶,是中国历史名茶,创制于1900年。曾出现在非官方评选的“十大名茶”中的系列中。太平猴魁产于安徽省黄山市北麓的黄山区(原太平县)新明、龙门、三口一带。太平猴魁外形两叶抱芽,扁平挺直,自然舒展,白毫隐伏,有“猴魁两头尖,不散不翘不卷边”之称。叶色苍绿匀润,叶脉绿中稳红,兰香高爽,滋味醇厚回甘,有独特的猴韵,汤色清绿明澈,叶底嫩绿匀亮,芽叶成朵肥壮。并赢得荣誉。此外,还有其茶文化,保健作用。
太平猴魁是中国历史名茶,创制于1900年。太平猴魁在1912年南京南洋劝业会和农商部陈列优质奖。1915年巴拿马万国博览会上获得金奖及“万人品茶”专用茶等荣誉,20世纪30年代曾在玻利维亚等国展销,新中国建立后,1955年,太平猴魁又被评为全国名茶之一。1979年在我国出口贸易中博得五大洲客商好评。2004年在国际茶博会上获得“绿茶茶王”称号,并以50克陆万壹仟元的价格拍卖成功。2007年3月26日胡锦涛总书记作为国礼馈赠俄罗斯总统普京。
“太平猴魁”自地理标志成功注册后,茶叶价格不断提高,产量不断提升,茶农收入节节攀高,助农增收作用明显显现。2009年,全区茶叶总产量1310吨、产值2.05亿元,综合产值6亿元;2010年产量1170吨,产值2.73亿元,综合产值8亿元。连续5年保持20%以上的增幅,每年净增3500万元以上。

等级之分
其品质按传统分法:猴魁为上品,魁尖次之,再次为贡尖、天尖、地尖、人尖、和尖、元尖、弯尖等传统尖茶。产品分为五个级:极品、特级、一级、二级、三级。
极品:外形扁展挺直,魁伟壮实,两叶抱一芽,匀齐,毫多不显,苍绿匀润,部分主脉暗红;汤色嫩绿明亮;香气鲜灵高爽,有持久兰花香;滋味鲜爽醇厚,回味甘甜,独具“猴韵”,叶底嫩匀肥壮,成朵,嫩黄绿鲜亮。
特级:外形扁平壮实,两叶抱一芽,匀齐,毫多不显,苍绿匀润,部分主脉暗红;汤色嫩绿明亮,香气鲜嫩清高,兰花香较长;滋味鲜爽醇厚,回味甘甜,有“猴韵”;叶底嫩匀肥厚,成朵,嫩黄绿匀亮。
一级:外形扁平重实,两叶抱一芽,匀整,毫隐不显,苍绿较匀润,部分主脉暗红;汤色嫩黄绿明亮;香气清高,有兰花香;滋味鲜爽回甘,有“猴韵”;叶底嫩匀成朵,黄绿明亮。
二级:外形扁平,两叶抱一芽,少量单片,尚匀整,毫不显,绿润;汤色黄绿明亮;香气清香带兰花香;滋味醇厚甘甜;叶底尚嫩匀,成朵,少量单片,黄绿明亮。
三级:外形两叶抱一芽,少数翘散,少量断碎,有毫,欠匀整,尚绿润;汤色黄绿尚明亮;香气清香纯正;滋味醇厚;叶底尚嫩欠匀,成朵,少量断碎,黄绿亮。
冲泡之法
太平猴魁作为绿茶中的一个品种,与其他茶品相比,太平猴魁茶汤回味甘甜,冲泡时就算放置的茶量过多了也不会苦涩,而其他茶类如果冲泡时放置的过多的话就会苦涩了,而且太平猴魁的冲泡起来比较简单。下面我们来看看太平猴魁简单的冲泡方法吧。
1、冲泡茶具上我们可以选择一个直形的玻璃杯,这样在冲泡过程中就可以欣赏到茶叶在水中舒展的过程。
2、从包装袋中取出三至五克的茶叶放入杯中,我们可以讲茶叶的根部朝下进行放置,这样不仅看起来会美观些,而且更易于我们的欣赏。
3、冲入90摄氏度左右的开水,第一次冲泡时不要加的太满,到差不多快一半的时候就可以了,等茶叶慢慢的舒展开来。
4、茶叶舒展的差不多时加入第二次开水,等几分钟,等到茶汤温度差不多时就可以进行品饮了。在品饮时不要一次性全部都喝掉,剩下三分之一左右,以便于后面的冲泡。
