江记豆腐乳创办人江凤声阿公在1940年代,经由友人介绍与大陆前来的泉州老师傅学习如何制作豆腐乳,在当时务农的台湾社会中,能有机会学习制作豆腐乳的技法是非常难得的机会,于是阿公下定决心努力学习,阿公勤勉的态度感动了老师傅,老师傅倾囊传授,并希望能将这豆腐乳技法继续传承下去,之后便介绍阿公到一家日本人开设的酱油工厂附设腐乳部当师傅,在此,阿公也将从老师傅身上所学习到的技法在这家工厂尽其所能的发挥,但无奈时代的变迁,日本工厂解散后,阿公不希望这个技法失传,抱持着不能辜负老师傅的期望下,便与友人合作开设食品厂,期间阿公带着一身好技艺,秉持着待人诚恳的态度,不仅仅受到同业的敬重,更奠定了阿公在台湾豆腐乳界的名号及地位。
于1965年在阿嬷的支持与鼓励下于板桥老宅创立”新蓬莱食品厂”,并于1984年以姓氏做为注册商标,江记豆腐乳正式誔生。阿公更是倾注了毕身所学及所有精力于豆腐乳世界中,阿嬷默默的在背后支持着阿公,在新蓬莱食品厂成立5年后,阿公因不堪长时间的劳累而病倒了,阿嬷除了要照顾阿公之外,更要想办法照顾这些如同家人般的员工们,在阿公过世后,阿嬷一肩抗起重责大任,没有多余的时间难过,阿嬷更在心里默默的发誓,一定要替阿公完成这尚未完成的愿望,要让所有台湾人都可以吃到江记豆腐乳,在阿嬷的指挥下,所有老员工及全员家族成员齐心协力的投入豆腐乳工厂的生产运作中,也落实了家庭即工厂的概念,并开始行销全省,豆腐乳也渐渐深入每个家庭生活中,成为当时家家户户吃粥必搭配的食物。
过去日据时代,台湾的豆腐乳都是大陆进口,而江凤声阿公将这手艺发扬光大,也让台湾人开始认识豆腐乳这项平实且耐人寻味的酱料。
1975年,蒋介石逝世,奉厝大溪慈湖,为大溪带来了观光人潮,也开启了大溪豆制品之蓬勃发展,当年掌舵豆腐乳工厂之第二代江春茂、江春阳两兄弟,积极拓展江记之销售通路、斥资千万投资现代化设备、引进日本豆腐制作现代化机械设备,使豆腐乳正式进入量产化,以符合广大的市场需求,并开发新产品、因而奠定今日江记品牌之基石,使得现今有”江记豆腐乳”等同于”台湾豆腐乳”之称号。
今日,公司已进入第三代系统化管理,追求品质、效率、创新与服务,秉持『一甲子的努力、成就家传的滋味』之信念,创造未来。
