武夷岩茶,产自武夷山独特的优良生态环境,素有“溪边奇茗冠天下,武夷仙人自古栽”之赞誉,品具“岩骨花香”,香气馥郁,胜似兰花面深沉持久,滋味浓醇清恬,生津回甘,浓饮而不见苦涩,汤色橙黄,七泡有余香,泡后叶底“绿叶红镶边”,细品有独特岩韵。
武夷山多悬崖绝壁,茶农利用岩凹、石隙、石缝,沿边砌筑石岸种茶,有“盆栽式”茶园之称。因为有“岩岩有茶,非岩不茶”之说,岩茶因而得名。武夷岩茶主要分为两个产区:名岩产区和丹岩产区。
武夷岩茶在我国茶叶发展史上,谱写了十分重要和光辉的一页。武夷茶在南北朝时(公元479年),就以“晚甘侯”(茶名)著称于世,唐代成为士大夫上层贵族馈赠佳品,宋元两代入贡朝廷,盛极一时。元大德六年(公元1302年),就于九曲溪之四曲溪畔设置御茶园。明代罢造龙团,改蒸青团茶为炒青散茶,随后又改制三红七绿的乌龙茶,即现在所称之岩茶。因而,武夷岩茶始于明朝,盛于清代,十七世纪远销西欧,蜚声四海。
大红袍是武夷岩茶中品质最优异者。武夷岩茶产于福建的武夷山。武夷山位于福建崇安东南部,方圆60公里,有36峰、99名岩,岩岩有茶,茶以岩名,岩以茶显,故名岩茶。武夷产茶历史悠久,唐代已栽制茶叶,宋代列为皇家贡品,元代在武夷山九曲溪之四曲畔设立御茶园专门采制贡茶,明末清初创制了乌龙茶武夷山栽种的茶树,品种繁多,有大红袍、铁罗汉、白鸡冠、水金龟“四大名枞”,此外还有以茶树生长环境命名的,如不见天、金锁匙等;以茶树形状命名的,如醉海棠、醉洞宾、钓金龟、凤尾草、玉麒麟、一枝香等;以茶树叶形命名的,如瓜子金、金钱、竹丝、金柳条、倒叶柳等;以茶树发芽早迟命名的,如迎春柳、不知春等;以成茶香型命名的,如肉桂、石乳香、白麝香等。
由于武夷岩茶的名气,元朝在武夷山设有御茶园,负责监制进贡的武夷岩茶。御茶园在明朝晚年荒废,现时遗址上建有御茶园茶楼。
