武夷岩茶，产自武夷山独特的优良生态环境，素有“溪边奇茗冠天下，武夷仙人自古栽”之赞誉，品具“岩骨花香”，香气馥郁，胜似兰花面深沉持久，滋味浓醇清恬，生津回甘，浓饮而不见苦涩，汤色橙黄，七泡有余香，泡后叶底“绿叶红镶边”，细品有独特岩韵。

武夷山多悬崖绝壁，茶农利用岩凹、石隙、石缝，沿边砌筑石岸种茶，有“盆栽式”茶园之称。因为有“岩岩有茶，非岩不茶”之说，岩茶因而得名。武夷岩茶主要分为两个产区：名岩产区和丹岩产区。

武夷岩茶在我国茶叶发展史上，谱写了十分重要和光辉的一页。武夷茶在南北朝时（公元479年），就以“晚甘侯”（茶名）著称于世，唐代成为士大夫上层贵族馈赠佳品，宋元两代入贡朝廷，盛极一时。元大德六年（公元1302年），就于九曲溪之四曲溪畔设置御茶园。明代罢造龙团，改蒸青团茶为炒青散茶，随后又改制三红七绿的乌龙茶，即现在所称之岩茶。因而，武夷岩茶始于明朝，盛于清代，十七世纪远销西欧，蜚声四海。

大红袍是武夷岩茶中品质最优异者。武夷岩茶产于福建的武夷山。武夷山位于福建崇安东南部，方圆60公里，有36峰、99名岩，岩岩有茶，茶以岩名，岩以茶显，故名岩茶。武夷产茶历史悠久，唐代已栽制茶叶，宋代列为皇家贡品，元代在武夷山九曲溪之四曲畔设立御茶园专门采制贡茶，明末清初创制了乌龙茶武夷山栽种的茶树，品种繁多，有大红袍、铁罗汉、白鸡冠、水金龟“四大名枞”，此外还有以茶树生长环境命名的，如不见天、金锁匙等；以茶树形状命名的，如醉海棠、醉洞宾、钓金龟、凤尾草、玉麒麟、一枝香等；以茶树叶形命名的，如瓜子金、金钱、竹丝、金柳条、倒叶柳等；以茶树发芽早迟命名的，如迎春柳、不知春等；以成茶香型命名的，如肉桂、石乳香、白麝香等。

由于武夷岩茶的名气，元朝在武夷山设有御茶园，负责监制进贡的武夷岩茶。御茶园在明朝晚年荒废，现时遗址上建有御茶园茶楼。
