鸿起顺是什么牌子?「鸿起顺」是 天津市鸿起顺餐饮有限责任公司 旗下著名品牌。该品牌发源于天津,由创始人孙志在1980期间创立,经过多年的不懈努力和高速发展,现已成为行业的标杆品牌。

“鸿起顺”诞生于1935年,河北省大厂遭水灾,回民左鸿林,左鸿发兄弟俩逃荒来到天津下瓦房一带谋生,并结识了从宝坻赶牛来津的李占起。三人合伙租了间土坯门脸卖起了牛羊肉,羊杂碎,后又增添了羊肉水饺、火烧、小菜和清炖牛羊肉等品种。店不大,生意红火,总要起个字号。经三人协商,用左氏兄弟名字中的“鸿”字,李占起名字中的“起”字。再加上企盼顺顺当当做买卖的“顺”字,便组成了“鸿起顺”饭馆,其意是“鸿业起,万事顺”。从此,随着买卖兴隆“鸿起顺”便叫响了。

鸿起顺特色

鸿起顺的勺扒和独菜颇见功底,勺扒具有一菜一翻的特点,制作的扒牛肉条、扒海洋等菜品绵香软烂,不乱不散。独菜具有小火慢炖的特点,制作的独鱼白、独羊脑滑嫩松软,色泽金黄。鸿起顺的菜品在调味上有独特的方式,善于用糖色、花椒油、姜汁等调勾口味,如在独、扒、烧的菜肴中使用嫩糖色和酱油,菜品金黄明亮;在烩、炖、熬的菜肴中使用面酱、酱豆腐,菜品气味清香;花椒油作明油除腥解腻,鲜姜泥泡姜汁提味增香。总结来说四句话叫做“糖色着嫩色,口味咸鲜香,肉糜吊高汤,吃姜不见姜“。
发展历程

解放前的十几年间,由于洪水和战乱曾使鸿起顺三起三落。解放后1956年公私合营,门脸有所扩大,“文革”期间名为“移风饭馆”,继又更名为“下瓦房回民饭馆”。企业始终处于亏损局面。1980年孙汝泉经理上任后,恢复了“鸿起顺”牌匾,使鸿起顺走上高速发展之路。

1986年孙汝泉经理带头在全市餐饮业第一家实行集体租赁经营,55名职工每人集资400元,置换了2.2万元国有资产,同年租借房屋建分店。1994年建成3000平方米鸿起顺饭庄,1997年并购“御膳楼”更名为“鸿起顺老字号”,1999年建成4800平方米河东鸿起顺饭庄2001年4月联营的和平鸿起顺饭庄开业,至此企业自营面积达9000平米。1995年鸿起顺被市政府批准为103家公司制改革试点单位,1996年成立鸿起顺餐饮有限责任公司,1999年调整了企业股权结构,增加了集体股,使股权比例为职工股占45%,集体股占33%,国有股占22%,走上了现代化企业规范管理道路。

1993年以来,大力实施品牌战略,先后建立起18家加盟连锁店,2000年走出津门把连锁店办到云南和河北省,2001年对加盟连锁店进行了认真整顿,对部分不符“鸿起顺”经营管理标准的连锁店摘了牌。
