全兴的历史最早可追溯至1367年，“锦江春”成为全兴大曲数百年古酿历史可考证的起源。全兴烧坊始建于清代乾隆51年，距今已有200多年的历史，全兴老字号作坊正式建于清道光四年，迄今已有160多年的历史。

1950年，川西专卖局赎买了“全兴老号”等酒坊，并沿用其传统技术酿酒，称其酒为“全兴大曲”。

1963年，全兴在全国第二届评酒会上获得“中国名酒”金奖，并成为中国老八大名酒（五粮液、古井贡酒、泸州老窖特曲、全兴大曲酒、茅台酒、西凤酒、汾酒、董酒）之一。此后的数次评酒会上，全兴大曲又屡获金奖，保持了“中国名酒”的地位，是成都食品行业唯一一块国家金牌。

1989年，依托已成名品牌全兴大曲中的“全兴”为核心，将成都酒厂更名为“四川成都全兴酒厂”。

1997年9月，重组成立四川成都全兴集团有限公司。并以“四川全兴股份有限公司”名义上市，股票简称为“全兴股份”。

1998年，全兴推出高端新酒品牌-水井坊。 

1998年至2000年3年间，全兴股份销量突破12亿元大关。 

2002年05月21日全兴33类商标完成注册。 

2006年，全兴与世界500强企业全球最大的烈性酒集团帝亚吉欧合作。

2011年，全兴集团完全剥离四川全兴酒业。光明集团控股的上海糖业烟酒集团，已经拥有67%的四川全兴酒业股权，实际上拥有了四川酒业“六朵金花”之一的“全兴大曲”品牌。
