“黄金香”系厦门最具知名度的中华老字号之一，至今已有一百六十余年历史。

清道光年间，年方十六的“黄金香”创始人黄知江，从祖籍漳州许县东山出发，提着竹篮，内装自家创制的肉松肉干，乘坐斗篷小船，来到漳州龙海石码镇沿途叫卖，闻说厦门港口繁荣，即转船到厦门进行试探性售卖。当踏入厦门，见到都市繁华，生意兴隆，即萌生留居厦门之念，决意在厦门开工设店。清道光二十二年(1842年)，黄知江在厦门关仔内(今大同路205号)开始生产肉松肉干，因选料精良，配料独特，加之精工细作，所产肉松色泽金黄，灿若黄金，其味香鲜，无与伦比，甫一上市，即广获好评，销路日广。恰店主姓黄，故取名“黄金香”作为字号，由此“黄金香”品牌日渐发展，声名远播。

因注重产品质量，薄利多销，诚招天下客，“黄金香”老字号的生意日渐兴隆，家族成员纷纷投入该店经营，广开门路，并创立了“黄金香送记”、“黄金香佑记”、“黄金香祖铺”、“黄金香胜记”、“黄金香兴记”等分号。抗战前后，黄金香在台湾、香港、新加坡、菲律宾等地均设有分店，产品远销泗水、爪哇、新加坡、马尼拉、槟榔屿等地，名扬闽粤台，声播东南亚。

1956年对私企改造后，“黄金香”所有分号即“黄金香送记”、“黄金香佑记”、“黄金香祖铺”、“黄金香胜记”、“黄金香兴记”并入厦门市食品公司，仍保留“黄金香”店名，一直延续经营至今。1984年，厦门市食品公司注册了“黄金香”商标。1994年，原国内贸易部授予厦门市食品公司“中华老字号”企业称号。

2004年厦门市食品公司改制为厦门黄金香食品有限公司，2010年1月公司更名为厦门夏商黄金香食品有限公司，公司现拥有“黄金香”、“黄金香HJX”、“黄金香XS”、“XS”、“亿家香”图形及文字商标。

2011年，商务部认定厦门夏商黄金香食品有限公司为“中华老字号”企业。
