吉庆祥(吉庆牌)位于秀丽的五华山旁边,是一个历史悠久的食品生产骨干企业。“吉庆祥”创建于1907年,最早的创始人是陈惠泉、陈惠生,兄弟二人小名分别叫“小庆”和“小祥”。由于二人的经营得到妹婿袁吉之的资助,因此就以三人名字中的一个字为招牌,起名“吉庆祥”,又请画家胡应祥设计画了注册商标,它便是今天的“吉庆牌”,商标中的“戟”和“磬”取“吉庆”谐音,也表达了“吉祥之意”。吉庆祥生产的“吉庆牌云腿月饼”已远销到美国、日本、新加坡、香港等地。
一九五六年公私合营时由吉庆祥合并了“合香楼”、“桂香楼”、“瑞兴祥”等十八家食品店、铺,而成为具有一定规模的“吉庆祥糕饼厂”。主要生产各式中西式糕点、滇式糕点、标花蛋糕等等。有十个产品荣获“中国国内贸易部优质产品”称号。云腿月饼自八二年以来连续20余年保持商业部优质产品称号。
“云腿月饼”为吉庆祥首创,旧时称为“火腿坨”或“火腿四两坨”。吉庆祥生产的“吉庆牌云腿月饼”已远销到美国、日本、新加坡、香港等地。并在2000年和2001年的中国月饼节上荣获金奖,2002年荣获中国“放心月金牌企业”称号。是云南省名牌战略中食品行业唯一荣获名牌产品称号的企业。吉庆祥在继承传统优势的同时,坚持采用新技术、新工艺,不断更新产品,是云南省食品行业中的龙头企业。
虽然吉庆祥创立于清末,但其渊源却可追溯到明末清初。坊间相传,明永历皇帝退居昆明后,终日忧愁,不思饮食,一位御厨别出心裁地选用宣威火腿精肉丁,混以蜂蜜、白糖包馅,称之为“云腿包子”。因其香浓味醇、甜咸适宜,永历享用后,龙颜大悦,遂列为御膳。
明王朝灭亡后,云腿包子的做法由宫廷传入民间。1860年在昆明成立的合香楼糕饼铺将“云腿包子”烘焙后,选用云南特有的“宣威火腿”做为主料,辅以白糖、蜂蜜、猪油、熟面等,创制出壳硬金黄、香味独具、油润不腻、酥软可口的点心。慈禧太后吃了云南巡抚进贡的这种点心后,感觉很好,随即给点心起名,称之为“火腿四两砣”。而一直延续下来的“火腿四两砣”逐渐演变成云腿月饼的雏型,云腿月饼150年的历史也就此开始。
相传吉庆祥1922年始进驻昆明。20世纪初在昆明,吉庆祥可谓风光无限:数米宽的大门,开向两边,高高的门槛与两米长的“吉庆祥陈记”牌匾天地呼应,在大门的左右各有一扇窗,上方“尘飞白雪”、“玉屑金泥”分列“吉庆祥陈记”牌匾两边,这些字均出自书法家陈荣昌的手笔,笔力刚劲,三块匾构成一个整体,相得益彰。各色糕点依次摆放在半人高的木质柜台上,等待着客人购买,当然,每年中秋时分,所有糕点中的花魁当属博采众家之长,集干馅、稀馅之优,吉庆祥首创的硬壳火腿月饼。
